Ingredients
4 potatoes, scrubbed, cut into thick wedges
2 tablespoons olive oil
1 small leek, thinly sliced
1 zucchini, halved, thinly sliced
1/3 cup semi-dried tomatoes
4 pink ling fish fillets
Lemon wedges, to serve

Step 1
Preheat oven to 200°C.
Step 2
Place potatoes in a large baking dish. Toss with oil. Season to taste. Bake for 20 mins. Sprinkle leek over potatoes. Bake for a further 5 mins, until tender.
Step 3
Stir zucchini and tomatoes through potato mixture. Place fish on top.
Step 4
Bake for a further 10-15 mins until fish flakes when tested with a fork. Serve with lemon wedges.
