Full Version: Pan-seared Whiting

Ingredients
Serves: 4

4 (125g) whiting fillets
1 pinch salt and pepper to taste
1/2 cup (60g) plain flour
1 tablespoon olive oil
2 tablespoons unsalted butter, melted

Directions
Preparation:10min › Cook:8min › Ready in:18min

Rinse whiting fillets in cold water and pat dry with paper towels. Season both sides of each fillet with salt and pepper. Place the flour in a shallow dish; gently press each fillet into the flour to coat and shake off the excess flour.
Heat the olive oil in a frypan over medium-high heat; cook the fish in the hot oil until the fish flakes easily with a fork, about 4 minutes per side. Brush the melted butter onto the fish in the last minute before removing from the frypan. Serve immediately.

Looks delicious , next time I catch some Whiting I will try and remember this is here, could do this with pretty well any fish though so will have to get out and catch something.

Back home with some fillets. Caught five blackfish. Tough going today. No bait on the rocks after the big seas of last week and the fish were far and few between. Not to worry - got a feed.

With all that bait being washed into the sea with the big storms the fish would be gorging themselves for the past week or so.
Great time for Snapper off the rocks after a blow.
